Turkey Meatloaf

I'll fix the recipe next time, but here are the ingredients
1 large onion diced
1 large green bell pepper diced
2 large portabello caps, sliced in 1/2 inch pieces
1 cup quick cooking oatmeal
2 eggs
1 lb lean ground turkey
Olive Oil for sauteeing
Ketchup for topping (or barbecue sauce, whichever makes you happy)

Saute onion and green bell pepper until translucent and let cool
Saute mushrooms and let cool
Combine all ingredients with some S&P
Mold like a loaf in a flat pan
spread Ketchup on top

Cook in 350 degree oven covered for 20 minutes
Cook uncovered for another 20 minutes
Let cool for 5 minutes before eating :-)
